
In these work from home times, I can’t get through my Monday morning, hell most mornings without a good cup of coffee and a bit of photography.
This Monday morning I sipped on Organic Mexico La Corona de Chipas from Allegro Coffee. It’s an inexpensive, light roast single origin coffee. I usually brew it in a Chemex with a ratio of 3 tablespoons of coffee for every 1 cup of water at about 200 degrees.
The Organic Mexico La Corona de Chipas is a consistent, good, morning coffee with its almondy cocoa notes. The smell from the bag is chocolaty, almost citrusy, and wakes you up a little as you brew it. This coffee also sips well over time, as it cools a more of the almond, nutty, notes come out to play.
Overall it’s an excellent coffee, that stays in rotation here.
