Drinking tea and coffee is part of my daily aesthetic. My favorite tea comes from Yogic Chai. Their Mint Masala is in rotation at my house right now. Usually we make the chai by taking a teaspoon chai for every cup of water, letting it simmer for 5 or ten minutes then adding milk and agave to taste. It’s a pretty simple but effective process. I was sitting, trapped in the house by a spring storm, and had some time to think. While sitting there I wanted some chai. I, recently, was given an old percolator. I wondered how the chai would come out if percolated. So using the same formula, I made the cup. I let is sit in the percolator about 10 minutes on high then turned down to a lower temp for a few more minutes.
