Foodalude: Coconut Chocolate Blue Corn Muffin Thingies (With Recipe)


I was in geeky mad scientist mode . I have been thinking about this recipe for a few days, it worked out well.This is all part on my continuing effort to be more economical and save money and work on my Food Photography. I also get to have something to pair with my morning coffee .

Gear Used in these image Cambot(my Nikon d90) Sb600 flash and my Nikon 35mm

1/2 cup butter, softened
2/3 cup white sugar
3 teaspoons cocoa powder
3 tea spoons of coconut
2 eggs
1/2 teaspoon salt
1 cups all-purpose flour
1/2 cake flour
3/4 cup blue cornmeal(or yellow, your choice)
1/2 teaspoon baking powder
1/2 cup rice milk (you can use regular milk, rice milk is just my preference)
Preheat oven to 400 degrees F (200 degrees C). Grease or line 12 muffin cups.

In a large bowl, cream together butter, sugar, cocoa powder, coconut eggs and salt. Mix in flour, cornmeal and baking powder; blend thoroughly. Stir in milk. Spoon batter into prepared muffin cups.

Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of a muffin comes out clean.
